While I was up in Leavenworth, WA last weekend teaching yoga, Tyler and I stopped by The Hunter’s Wife Health Bar, for a snack. First of all I love everything on their menu, they have a wonderful selection of fresh juices, smoothies, bowls and some fun waffles, as well as a variety of Kombuchas on tap. One item in particular stood out on our visit, however. Tyler got the sweet potato waffle and it was amazing…so I of course was inspired to recreate it when I got home! There’s quite a few different recipes out there and the thing I liked best about the one at the Hunter’s wife was that it had banana and a lovely mix of spices in it so I put together the following recipe and it turned out great. This is a super healthy and yummy recipe that is perfect for fall, I hope you enjoy it!
Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. They are also a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. (All good stuff!)
Ingredients (serves 4-6)
- 1 1/2 cups Sweet Potato Puree
- 1 Mashed banana (the riper the better)
- 2 Eggs
- 2 Cups Gluten Free Waffle/Pancake mix (I like Namaste and Bob’s Red Mill best)
- 1 Tbsp Honey
- 1-2 tsp Cinnamon*
- 1/2 tsp Nutmeg ground*
- 1 cup Almond milk (or whatever milk you like)
- 1 tsp Vanilla extract
*If you’re a pumpkin spice lover, you can substitute it for the cinnamon and nutmeg.
Instructions
- Pre-heat waffle iron
- Separate the egg whites from the egg yolks and in a large mixing bowl blend/wisk the egg whites until they are fluffy (best to use an electric mixer) This step makes for light fluffy waffles.
- Add the remaining ingredients including the egg yolks to the fluffy egg white and blend until smooth and uniformly mixed.**
- Pour 1/3-1/2 cup of mixture into waffle iron and cook until golden brown on each side
- Serve with Maple Syrup, or Yogurt or whatever else you like with your waffles. I Had mine with honey greek yogurt and peaches and my son had his with butter, syrup and whip cream.
**If you want to boost the protein content you can also add a scoop of your favorite protein power during step 3, I use Vanilla Isalean from Isagenix.
